Aunt Patricia's Coconut Custard (makes its own crust)






1/2 C. all purpose flour
1/4 C. butter (not margarine) melted
4 large eggs
3/4 C. sugar
pinch of salt
1 tsp. vanilla extract
1 tsp. coconut extract
1 C. sweetened flaked coconut (plus a little extra for the top) 
2 C. whole milk

Put all of the ingredients in a blender and blend for 30-60 seconds, depends on your blender, until well combined. Pour into a buttered 9" pie plate (I place mine on a baking sheet to make it easier to handle) and then sprinkle a little more coconut over the top. Place in a 350 degree oven for 1 hour, maybe a tad more depending on your elevation. Remove and allow to slightly cool before slicing.
